Steel-Cut Oatmeal Raisin Muffin Recipe


Have you tried to revamp your regular breakfast into something more delicious and enjoyable to eat? Here's one easy recipe that you can make out of your regular oatmeal breakfast.

I woke up this morning feeling tired of having oatmeal and raisins for breakfast. As much as I want to eat healthy and keeping my cholesterol low, I wanted to have some delicious looking breakfast to fill my tummy. I thought of eating bread but I discovered there was none, so, I thought why not make my own? I searched the internet and found a good recipe, Whole Wheat Oatmeal and Raisin Muffins at My Recipes. I didnt have much of the ingredients listed on their website so I replaced it with what I have and followed the same procedures ( I just changed the recipe name since I'll be using steel-cut oatmeal instead of whole wheat. So, I got my baking utensils, fired-up my oven, (and I'm talking about eight o'clock in the morning) and baked my own muffin. 

Steel-Cut Oatmeal-Raisin Muffin

Ingredients:

1 cup flour
1/4 cup white sugar
1/4 cup brown sugar
3 tbsps. wheat germ
1 1/2 tsps. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1 cup quick cooking steel-cut oatmeal
1/2 cup whole grain rolled oats
1/2 cup raisins
1/3 cup chopped almonds
1 cup buttermilk
1/4 cup canola oil
1 tsp. vanilla oil 
1 large egg, lightly beaten
1/2 cup boiling water
cooking oil ( for brushing inside of muffin pans)

Preparations:

  1. Combine flour and next six ingredients in a large bowl, stirring with a whisk. Stir in oats and raisins. Make a well in center of mixture. Combine buttermilk, oil, vanilla, and egg; add to flour mixture, stirring just until moist. For a more tender muffin, stir in boiling water. Let batter stand for15 minutes then add the almonds.
  2. Preheat oven to 375°F or 190°C.
  3. Spoon batter into 12 muffin cups brushed with cooking oil. Bake  for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; (Note: since mine was sticking to the pans,I had to wait for about 5 minutes before I was able to remove it clean). Place it on a wire rack.
Pair it with Soya Milk. Enjoy your breakfast!
